Actually I regularly remove plants that come mounted and pot them up. The latest group included: Gastrochilus japonicus and three Tuberolabium. I really don't like stuff that is mounted--I don't have the time to water constantly.
So, to answer your question, yes, I try to save as many roots as possible. So, for example, I potted up the aforementioned plants into a 4.5 inch plastic pot that is not very tall. The Tuberolabium had root systems almost as long as my forearm when I unwound them from the wood pieces. I did trim off some roots but the trimming was kept to a minimum.
I simply soaked the roots until they were pliable enough to make a little root ball and gently placed them into the pot. That was in May of this year. All the plants I mentioned are spiking. So, it definitely can be done.
