Epsom salts is not sulphur, it is pure magnesium. Plants need magnesium, especially in conjunction with calcium, but tap water contains calcium, so it's unnecessary to add it. You might want to check out this article on epsom salts:

I'm using Grow More 20-10-20 urea-free and I see it has Manganese .05% chelated manganese. Does that fill the bill or do the epson salts provide it in a form more useable by the orchid?

EDIT: Oh wait, never mind. I see manganese Mn is a completely different element than magnesium Mg.
