Default Winter Dry-spell on orchids?

Hello all, its coming to winter now in Australia and I was wondering, with the Dendrobium speciosum and other Dendrobiums such as Den. Yondi Tina 'Goliath'...would they require a more dry winter compared to the Cymb?

Why i ask? Because i read a culture sheet done by the Australian Orchid Nursery, and they recommend less water during winter, and best to have a clear plastic sheet over the orchid to prevent drowning the roots and spoiling the newly flowering spikes forming.

I also have a collection of Sarcochilus, would they require drier winters as well?

Stephen,

The only one I can comment on is the Sarcochilus. I raise my plants in Semi Hydroponics. I have 2 Sarco. Melba (falcatus x hartmannii) plants that have stayed wet for over 5 years and bloom very well every year.
