Coconut Water Rehabilitation: A Case Study

Here's the solution I'll be using...

I popped by the local health food store and bought a few natural coconut waters, opting out of using drilled coconuts, as those I picked up perviously were too mature and not the young green ones the water is usually derived from.

Anyway, the local store actually had 3 or 4 different types of pure coconut waters (all of which appeared to have no additives listed in the ingredients... but to be totally sure I bought the one which explicitly states no preservatives, sugars, or anything other than the pure water). I also bought one for myself to drink, and it's rather tasty Each individual package of coconut water (11.2 fl. oz) runs $2.50. Hopefully the pasteurization process hasn't broken down the natural enzymes

So I diluted the coconut water to 50% and stored it in the refrigerator to help it keep a little better, although I anticipate going through this pretty quickly anyway.

cool beans .....

I will have to read up on the pastureization too as I dont know either.They used coconut water for lots of research back in the early days of tissue culturing

I've heard the same thing, Angela. You should be fine.

If you freeze some after opening, or that you've mixed, it should keep for a couple weeks. In the fridge- I'd toss it after ten days.
