Sphag makes things easier for the nurseries and garden centers to handle/water.

They also ship easier.

When you know they're shipped from places like Taiwan or Malaysia, you'll get it.

Taiwan, Singapore, Malaysia, and even Japan and Thailand to a certain degree are major centers for Phalaenopsis production (that's right, you read correctly, and I didn't make a mistake by using the word "production"). They are where the majority of the Phals come from because they are major distributors of cloned, and to a smaller degree, seed propagated Phalaenopsis (tissue culture is bigger in those countries than in the US - I think it's because of the price).

Fertilizer:

N-P-K: roughly 20-20-20; it doesn't have to be exact, close enough is fine.

Urea free. Majority of the nitrogen should be ammonia or nitrate based.

Water soluble.

Doesn't matter what brand.
