Okay, let's help you save "Meatloaf"...
Forgive me for asking...
But are you from one of the southern states in the US.
The way you're typing your posts, it sorta looks like you are. I could be wrong.
There is a reason I bring it up...
The southern states from what I understand, are pretty humid.
Humidity is a big plus for Phalaenopsis!
If it's humid, you can afford to not water quite as often because the potting medium should be slower to dry out.
Now about the potting job...
The pot in the last two pics are too big for the plant for the size of the root mass you've got.
If you're from a humid area, mounting the plants onto wood would be an option for you.
The plants will recover from this kind of damage much, much faster if grown mounted.
I had recent experience where I damaged the roots to my Phals. I grow all of my Phals mounted. They recovered very quickly. Especially when it was during prime growing season - summer.
The warmer months are a rollin' around that corner soon Miz Willy, so I've gotta feelin' your woes are about to not be quite so troublesome!
If you can post what state and area you're in and determine if it's humid where you are, we'll go from there.
But I think this is a good start.
