Congratulations on the wedding, but I don't think you'll find a lot of expertise on that here, Fini. We're growers, not stringers of orchids.
Here's a thought though - you can estimate by deciding what type of orchid you want to do that with - I suspect dendrobiums or phalaenopsis will be your best choices, due to availability of cut flowers - then by estimating the space each blossom will take up (1" for dens, 2" for phals, maybe?), and the length of the "necklace", you can figure it out.
Another alternative would be to contact suppliers in Hawaii and ask them directly. You might even be able to purchase leis outright and have them delivered the day before the wedding. I'm sure you'll have plenty else to do in preparation!
