If the mounted Phal is doing well, then by all means keep doing what you're doing...
But if I may make some suggestions on the mounted Phal...
Take some parts of some of the roots and expose them to the air, but tie them down over the moss. You'll avoid long term losses of roots due to rot in the long run.
Also try to avoid getting the moss onto the stem of the plant. The base of the plant should be positioned on top of the moss.
You also only need a thin 1 strand thick layer of moss. Might save you some moss and money.

Orchids can still be over watered when they're mounted, it's just harder to do it.
