Just to add my I have never had any problems with cutting a green stem, so go for it. I think the majority of Phalaenopsis hybrids are pretty robust. Also I have to admit to not sterilizing my knife although it does get put through the dishwasher - does that count?

To be safe, it's best to flame-sterilize the blade before you use it, or better yet, use a disposable blade and chuck it out after you've used it. It's all to help eliminate the spread of viruses, which can sometimes be difficult to spot.
