I think this always has been a root. Most likely the root tip has been damaged in the past and now the root decided to get growing again. Some roots want to have a better view of the environment and grow up...

It has indeed always been a root.

Once the undifferentiated meristematic tissue does differentiate into root, stem, foliage or whatever, it cannot change to another form

mine has many roots as yours but depending on your varity, it may bloom a little later. It takes a few weeks of cool temps to set it into blooming mode. Your new roots show it is growing, don't dispair. New leaves grow from the center.
