Default Rescuing a Dendrobium of the nobile type - advice required

I've been asked to look after a Dendrobium of the nobile type which was growing in a plastic pot inside a decorative planter, the whole lot being completely filled to the top with medium large chip bark which was so sodden that there was white mould growing on the bark and water poured out when it was tilted (don't ask about the previous owner). I have taken it apart and put it loose inside a clear plastic pot to dry out but I'm wondering what to do next.

The roots were healthy looking but completely white - they are going a bit browner now. However the new growth was very twisted and deformed - a bit like the pleating you get on Miltonopsis but twisting instead.

Question: Assuming this plant should be going into winter rest do I leave it to dry out some more and move it into a cool greenhouse? I assume I should also repot it properly - it's currently looking very naked!

I have my nobiles planted ina combo of lava rock and bark. I don't see why you can't leave it in the plastic pot with the medium of your choice. During the winter I have mine in a sun room where the temps vary from 60 to 75 degrees. They are left to dry out and get an occasional misting an a slight dose of water once a month.
