some beginner questions about phal

I've recently received this phal but I'm not sure how much potting media I should add. Should I add enough media until that one root growing out of nowhere where I labeled 1 or below that point?

Another question is, if I want to cut a spike, do I cut it a little bit above the second node of the spike? or should I cut it on the bottom where I labeled 2? or should I just leave the spike alone and let flowers bloom next year?

I usually see phals with 1 spike but mine has 2 spikes growing, is this a specific type of phal that grows 2 spikes?
