Okay, would anyone with the knowledge to do so be up for a challenge?

I would LOVE to have a chart of sorts that gives which orchids prefer more or less light, same for water & temps.

It seems that none prefer full sun but that some may prefer it slightly more shaded than others, same for water!

Does such a source exist or would anyone be up for the challenge?

Doing a chart for 30,000 orchid species would take a heck of a spread sheet.
However if you have certain orchids you are interested in, try this site.

I've seen information that narrows it down to individual genus/sub-genus light and water levels, and that should be fairly easily searchable on Google, but I haven't seen anything like that for a species list.

Once you have an idea of the type of orchid though, you can get more detailed information by looking for a specific species within that genus. Bakers' culture sheets would be a decent source for that information...they have very detailed information about light levels, humidity, temperature and water. Some of them are free, though there is a small fee for most of them. I have purchaced them for most of my orchids.

Plus you have to think of permutations.

A plant that likes it bright and cool can sometimes tolerate more heat if kept more shaded. The converse is also sometimes true - generally, a plant can tolerate more light if kept cool.
