Den roots are white then turn green when you water them. They are considerably smaller than Phal roots, though. I only know this for certain, because of several I have had to nurse back to health un-potted.
As for watering, as others have said, it's best not to keep a rigorous schedule. Watering depends on a couple of things: what medium it's growing in, what your growing conditions are like. If it's dry, you will probably need to water a bit more. If it's humid a bit less. The skewer method is a great way to figure out when to water. You will get the hang of it. Check out some of the other threads posted and you will certainly find some fantastic information.
