Default Newbie in need of some advice!

fellow orchid enthusiasts!
I am new to this board and fairly new to growing orchids.
My Dendrobium Nobile has just finished flowering and the flower spikes are dying and withering on the canes.
My question is this: do i leave the dead spikes on the canes to do their own thing or should I remove them?
I would appreciate some advice in this matter.

You can just let them dry out.

Hi King of orchid growing and thank you for a swift response.
Presumably they will drop off or something and be replaced by new flower spikes next year?

Yeah, they'll drop off. And yup they'll grow new spikes next year.

Are you familiar with Dendrobium nobile and their hybrids?

Then you've probably read they're fully deciduous Dendrobiums and need a 2 to 3 month winter rest with no water and fertilizer?

Yes as I gather they need minimal watering during winter-just enough to prevent the canes from shrivelling. Is this correct?

It's better to not water or fertilize at all.
