Default To Cut..or Not to Cut [dend and cymb]

Not sure what to do when my Cymbidium and Dendrobium are done blooming. I've heard some orchids bloom from the same spike the next time. I just don't want to cut off something that might have flowers next year? Thanks in advance for any ideas/answers.
