I have a dendrobium nobile that hasn't been watered in weeks. It now has several spikes throughout... I know.. awesome right? But my question is... do I begin watering it now that it has spikes? or should I wait until the blooms open?

If you are referring to new green shoots, then start watering. If you are referring to flower buds along the dormant canes, then hold off till they are at least 1/2" long. When you resume watering, only water a couple times per week. Let it get dry between waterings. Then slowly resume normal watering by increasing frequency each week until you are up to daily (or whatever you used to do.)
