Dendrobium Nobile question

This is a nobile dedrobium isle x superstar.
I have been instructed to not water it during the winter. I haven't watered it for a few weeks now.
I'm starting to see new buds on it. Should I start watering it again? if not now, then when?
The newest cane does not yet have buds.
There is also a keiki on one of the canes. When should I remove it, or should I not?
Some of the canes are wrinkling, and I'm loosing a lot of leaves.

I have the same orchid. It spent from May thru Mid November outside here in Massachusetts. It bloomed once in July and it now has "loads" of buds. Before the buds I had not watered it but since they appeared I have begun to water. I'm not to sure on the
keiki question, although it might just be a personal preference as to whether to keep the keiki on the plant. The general rule of thumb is to let the roots get to be 2 to 3 inches long before removal. The leaf drop is normal and the wrinkled canes should rejuvenate. I'm quite sure you will get other tips but this has worked for me.

The "buds" look like the start of Keikis to me. You really want to dry this down till it looses most of its leaves. It should tell you when it's ready to start growing again with new basil growths. The keikis may be a result of watering too late. I usually stop watering my deciduous Dendros at end of October. I struggle with deciduous types if I water past then. They want to keiki. Then those buds just dry up. Oh, I almost forgot, yes, you want the leaves to turn yellow and fall off. The canes that will bloom in the spring will be leafless.

Looks like its going to bloom! I have a very similar one also loosing the leaves on year old canes and in bud. About the watering see this entry.
