Winter requirements of several species??

I have on order ( still not arrived due to bad weather conditions) a Thuna alba and a Maxillaria hematoglossa and a Dendrobium williamsonii, I have read certainly for the first two that they need a winters rest but what about humidity will I need to put them on a tray with stones and water as my humidity is around about 40% they are all cool growing orchids apparently, They are coming with instructions but I dont know if they will be instructions enough for a total begginner.
