Your plant doesn't appear to be getting the right cultural requirements. Indirect light, bright light, vary depending where you're growing this (inside, outside, what part of the country you're in, etc.). These kind of Dendrobiums need to dry out inbetween watering and need a good amount of water when you do water. If you've kept this indoors all along, under or near the air conditioning vents, this could definitely be why you're having the problems, mentioned.
Some Dendrobiums lose all their leaves and go into a dormant cycle when the weather cools in winter. Yours doesn't appear to be this kind but nevertheless, all Dendrobiums lose some leaves, usually when they awake from their winter rest. The cause for your leaf loss though, may be because of it's condition and it not receiving the right light and water, don't quite know what yours is receiving but I suspect water and light are the problems.

This is very hopeful. I would reconsider the growing medium and possibly use bark or LECA or other non-orgranic medium for the Dend. Moss tends to stay too wet, too long and Dends need to dry out quicker than moss allows and remain dry inbetween watering.
Change the medium, give it high light and not necessarily, direct, up the watering and let it dry inbetween.
