Best way to keep Phal. healthy? Should I cut broken stem?

I had to cut my stem all the way down. There is currently a new leaf and roots. I keep looking for a new stem , but am not sure what it will look like. Can you help?

Spikes are difficult to tell to begin with, they often look a bit like new roots at the very beginning. You want to look for a 'mitten' like look on the end of a new growth.
