Default Aerangis punctata buds?

I ordered my new Aerangis punctata in June; it arrived on 29th. Looked bad, a lot of dead roots and connected to some....mesh sponge? i don't know what it is, but wasn't looking fresh and new. Since i was mounting it with moss anyway, i decided to leave the roots as is, only removing excess mesh-thing for easier handling. The cluster had split into two, and it seems not to be dying?? But today i found this out; i had seen some growth a day or two ago, but since i haven't looked up closed, i dismissed it as roots at first glance.

My experience with this orchid is non existent; she's my training dummy if you will. Could anyone tell me what exactly the growths to the front are?

I think you refer to a brownish coarse sponge? This seems to be a new potting medium for nurseries.
I leave it as it is. It's airy and dries fast.
It will last forever.

The first time I saw this I tried to remove as much as possible damaging the roots and causing a severe setback for the plant.

It made it extremly difficult to mount. Also, i can't really use things that dry too fast; my enviroment forbids it. Anything less retentive than sphagnum moss requires daily watering.
