So today I bought a Peristeria elata for cheap ($3.50, usually it's $7) at a local nursery, so should I repot this thing or not? I mean, it looks like it's outgrowing it's pot...

I don't have experience with this particular one - other Board contributors will certainly jump in with more specific advice. But in general, when deciding when to repot, look for new growth and especially new roots. There are exceptions where it's an emergency, but I ton't think that is the case here. In general, a too-small pot is much better than a too-large one, most are quite happy being somewhat root-bound but hate having a soggy-wet airless spot in the middle of the pot which is often the result of a pot that is too large.

Yes, repot the next time it is making a new growth. Use a pot at least twice that size. They make a lot of roots. Use a potting mix appropriate for Cymbidiums. Gently shake off any old loose medium, but do not pick out all of it, or you will damage the roots.
