I have bought another new orchid (it is starting to become a bit of an obession). It’s a cymbidium, but Im afraid it’s outgrown the pot by quite a bit, but Im not entirely sure if it’s meant to be like this. There is almost no visible soil mixture?
You will find lots of videos online telling you to pull apart the roots, remove every piece of old medium and prune off lots of old roots. Don't do that. WW gave you correct advice.

I totally agree. Just drop into a larger pot. Those are beautiful roots, they will spread out when they have the room. Cymbidiums have huge root systems. And don't cut anything! Use small bark, they do like to stay damp. Also, Cyms are high-light plants. Give it as much light as you can, and once the weather becomes warm enough (low temperatures reliably above 4-5 deg C) it will benefit from being outside.
