I keep mine in my house March - October and out in my winter greenhouse (minimum 45 degrees) in the winter, along with all my other orchids that need a dry cool rest. The Baker sheet specifies a cool/dry winter rest.
If you aren't providing the cooldown I would keep watering as normal. I actually bloomed this in my intermediate-warm room (65-85f) and kept it alive for a couple years. It was much happier when I moved it to my living room (normal home temps 68-74f) during Mar-Oct and to the garage in winter.
