You can cut the old, dead, brown spike. It isn't doing anything. Leave the leaf alone... when it is ready, it will drop of its own accord. But it sounds like you are doing great. That new growth is a basal growth, not a keiki (it shares a root system with the main plant) If the main part of the plant lies, that new growth will keep it going. If the old part survives, you'll have two places that can produce flowers, making an even better display. Keep up the good work!
