I'm kind of a sucker for big fat pseudobulbs. What species have such? I can think of Peristeria elata, Schomburgkia tibicinis, various catasetinae and Cyrtopodiums, but I'd love to know any others.

Hot dang, quality suggestions already. Inobulbon looks like hairy little animals and Neomoorea has such gorgeous blooms alongside them gorgeous bulbs.

Laelia purpurata gets some pretty chubby satisfying bulbs if you grow it well!
