These three species are what are called bifoliate Cattleyas. They make two (rarely three) leaves at the top of each pseudobulb rather than the one of the unifoliates like C. mossiae. Unless your plant's ancestors are dwarf versions of the species, it will probably need to be taller before it flowers.

I have another Catt that has two leaves and single leaf grown from the same plant. Is that normal?

Yes, especially hybrids frequently make an extra leaf here and there.

I took a closer look and nope, what I thought was a bifoliate growth is in fact a bulb with leaf growing out from center of another leaf. How odd. Is this common?

It is not ultra rare. I have two that have done this. One is a cattleya and the other an oncidium. I'll post pics later if interested.

I imagine someone will explain what is happening with them, I don't know myself and would probably guess wrong about what I think it is.
