Dendrobium Nobile new growth over winter?

Hi there,
I have a Dendrobium Nobile which has just put up 3 new canes but it’s the beginning of winter.

Is this normal? I was about to put it through a winters rest period to induce flowering but am unsure of what to do now as it seems to be actively growing.

Would love to hear if anybody else has experienced this, if it’s normal for a Dendrobium Nobile type to do this or any other thoughts.
