If the plants are mounted (and established on their mounts) you probably don't want to disturb them. If keeping sufficient moisture on them is an issue, you could add some sphagnum moss, or place the whole thing (mount and all) in a pot or basket with medium. As far as temperature is concerned, while both of those species are a lot more cold-tolerant than the larger Phals, your current lows are pushing the envelope. A lot depends on what conditions they experienced before they came to you - an inquiry to the vendor may help. If they are truly acclimated to that temperature range, you're fine. If the vendor was growing them with protection, you'll want to do the same - bring indoors. When they get cold, these species do lose their leaves - in milder conditions tend to keep them. If they have leaves now, that's another clue that you will want to protect them this winter. After a full growing cycle they'll be able to acclimate. (I grow mostly outdoors, with a climate similar to yours, and that is something that I have learned, plants acquired in the fall and winter, even if they theoretically can tolerate the cold, usually need to be pampered until things warm up a little since most growers have more controlled conditions to grow commercially. Once they have been outside through spring, summer and fall, they can manage the following winter)
That Coelogyne will definitely need protection, and some love - small bark or sphagnum moss, damp but not soggy, keep it in the house if you don't have a greenhouse. Again, once established and acclimated it would be OK outside... next year.
