How do I go about separating this keiki?
Should I cut the pseudobulb where the roots end or should I try to detach the roots from the pseudobulb?

No guarantees, but I’d do this:
Wet the roots, wait 10 minutes and repeat, so they get a bit supple.
Using a credit card or other stiff plastic tool, gently pry the roots to separate them from the old pseudobulb.
Grab the keiki by its base and snap it off.

If you want to wait more, then the roots will likely become longer, and may even come away from the bulb area all by themselves. So when the roots become long enough and big enough ------ that's another possible time to remove the juvenile orchid.

Personally, if it were mine, I would wait a bit longer. I have found that the bigger the keiki is, the more likely it is to thrive once removed from the main plant, however the methods described above are also perfectly viable. It is just my personal opinion that i would wait, maybe even until the keiki starts to form a second growth.
