Update
the stem is always the same....!!!, but I have a new leaf I read that the flowering period should be March-May. Now I'm trying with a Peters 10-50-10 hopefully everything is fine.
I have a big problem.
My probable stem, I think has dried up (see photos before it was violet)
For fifteen days I was unable to give water because I was in the hospital, but I'm not sure that it was already dried before.
The speckled leaf is the small central one born recently (see photos before) and now grown.
Now, will it be able to put out a new stem with good season?
What can I do now?

The previously purple one appears to have dried up. But just leave it and see if a miracle can happen. It is probably dried up.
As for the orchid surviving and later producing new off-shoots, it appears that this round was survivable.
If the orchid is going to need watering, then somebody should go around to help out with watering - after some important watering instructions that is.
At the moment, I think that resumed orchid care will see this orchid survive. It should be ok. All the best!
