I've got thousands of corks, can't think why
Can I just chop them up and use them or do I have to do anything like sterilising them?

I think just chop them up... make pieces small enough to give good surface area and so they can be packed around roots firmly enough to give stability. I have found that the biggest problem is having the patience to get the pieces small enough... maybe run them through a food processor or blender? Corks don't really hold much (if any) moisture so surface area is key.
