You might get away with once a week but most Vandas want to be watered as soon as they dry out.

Okay in NY with one small southern window, three good size western windows, 2 small northern windows, ceiling fan & oil heat + wood burning stoves.
Can shower with plants for humidity purposes or will purchase a small humidifier.
Have a green house that's closed for the winter but work's fine in the growing season.
Masdevalias, Phals, Paphs my best choices or can I find another orchid that can thrive and be suitable for my environment?

Oil heat plus wood burning stove - check your relative humidity. This and sufficient light are two big problems for most people in cold-winter climates.

Humidity. Just get enough other plants and humidity is not a problem.
In the beginning, I grew my orchids on a shelving unit among other plants and never understood the humidity problem. The first two years growing under lights, my orchids were alone and humidity was a problem. Now that I have started growing other plants under the lights, too, humidity is, again, no longer a problem. I do not find most orchids to be a good source of humidity.

Charles, I was thinking about this post while walking around the house looking for a sunny cool window for a Dendrobium. This plant is outside of my conditions and, therefore, a problem child. My advice as an intermediate grower is go buy what fits your conditions until you are confident enough to be giving advice. 😉
As to the comments about humidity, I agree with Leafmite. Grow a few other plants too. I am partial to begonias, myself. But, now my problem is condensation, even though I have good circulation. Proof that every solution breeds new problems ( I married an engineer).
