Dendrobiums have a sympodial growth habit. I would wait until the flowers have gone and repot right before the new roots appear.
Phalaenopsis are often complex hybrids. They have a monopodial growth habit. Depending on light, humidity and temperature they are growing year round. Flowering takes energy and is kind of a stress for the plant. Repotting is also stress. Here the flowering season is over in April, which is also the best time for repotting.
My advice for Phalaenopsis is to wait 2-4 weeks after flowering is over. Then you can repot. If June/July are the hottest months in your country, wait until temps grow colder.
