I'm surprised nobody mentioned
Maxillaria tenuifolia (coconut) or
Lycaste aromatica (artificial cinnamon) yet.
I have a
Zygopetalum which has a strong gardenia-like scent which is quite pleasant.
Masdevallia glandulosa is a pretty great smell too, sadly I don't have one, although I've given one a sniff at a LOS meeting where someone brought one in.
My
Aerangis fastuosa has bloomed twice (so far); the first time the jasmine scent was almost overpowering early in the evening - particularly if you put it in the car to go to a LOS meeting!
Dendrochilum glumaceum also has an interesting scent, although not one I particularly enjoy.
I'm looking forward to my stanhopeas doing something one day...
I find the
Dendrobium kingianum a bit too "hyacinth-y" (a smell that makes me feel ill) and my particular version of Onc. Sharry Baby 'sweet fragrance' from Carter & Holmes isn't that great. :/
I quite enjoy having plants with
scents, although I imagine some of my bulbophyllums may one day make me decide that statement isn't necessarily accurate.

I'd really like some citrus-y smelling ones, if such a thing exists.
