Pleione questions regarding dormancy

I have a Pleione praecox, a fall-flowering variety that finished blooming a month ago. It has only 1 pbulb, and from what I read, the spent flower spike will magically transform next year's new growth. It is potted in sphag, and I've been keeping it dry ever since it stopped flowering. Temps is 65deg F.

I just noticed short tiny roots growing from the base of the spent flower spike (or, should I call it, the new growth). I thought it was not supposed to do anything while dormant. Should I still continue withholding water until spring?

P.S. And I think I even see green leaf tips emerging from the tip of the spent flower spike. This is honestly the strangest orchid I've ever grown.
