The real Hawaiian Orchid Source
I have never heard of Orchids and Fire, so don't attach this opinion to them in any way. That said, use extreme caution when buying from the company actually named "Hawaiian Orchid Source". I bought three of my first plants from them at the Seattle Home and Garden Show one year. All but one died, and that one is only now growing normally, after almost 2 years. The only roots it had was a half-inch stub after I removed the rotten pieces. The pots were covered in plastic so the medium could not be properly observed and once I brought them home, they started sprouting weeds left and right. If you buy from Hawaiian Orchid Source, inspect plants carefully, then go somewhere else! Granted, I was very new to orchids, but I am very observant (thank you OCD) and the plants appeared healthy. The main problem was the plastic over the pots. I couldn't inspect the medium and therefore had to go by the condition of the top. Sorry for the ranting, but I just wanted to warn people.
