Default how can this be happening!

my good aunt of mine gave me an orchid. it looks odd to me at first... and after looking at it closely it seems the flower came from an "old leafless wrinkled dead look canes" ok now im starting to get frustrated. if she can produce an old leafless cane then i believe she can produce alot of spike flowers back then "right?" i've always thought "my idea of an orchid" once a cane is mature then i expect a flower spike will appear after it blossomed and withers i have to wait for a new growth to mature"

here's my question? - how can this dendrobium shoot a spike of healthy flowers coming from an old leafless cane. Please if you have any tips i would be happy! *im kinda embarass asking my aunt about it.
* and may i know what dendro specie this is? thanks
