I've never heard of it being used in aquaria, although I have heard of sugar being used. I'm not certain of the dosages for anything other than ethanol, which are extremely low.

I believe you are correct about the trade secret aspect

Carbon, in this case, is a building block. The fermentation creates alcohol and carbon dioxide as byproducts. They made another version for human (their own families) consumption using maple syrup.
